taco tuesday noodle casserole
This simple recipe is super tasty. I prefer to make it with elbow macaroni but tonight we tried it with egg noodles and it was good as well but I think we will stick with the elbows for the future. I make it in a loaf pan and it really is enough for 4 servings as presented. Serve it alone or with a little side salad and a Margarita and you will be a happy camper ! It is great as leftovers too !

Ingredients
- 1 cup uncooked elbow macaroni
- 1 cup refried beans
- 1 cup crushed tortilla chips - regular or nacho cheese flavor
- 1/2 pound lean ground beef
- 1 green onion - chopped
- 8 ounces tomato sauce
- 1/3 cup water or chicken broth
- 4 ounces diced green chilies - more to tastese more if des
- 2 tablespoons taco seasoning - more or less to taste
- 1 cup shredded cheddar cheese
- garnishes - shredded lettuce, chopped tomato, chopped green onion, sliced black olive, avocado slices, extra shredded cheese, taco sauce, sour cream
How To Make taco tuesday noodle casserole

Step 1Preheat oven to 350°. Spray a loaf pan and set aside.

Step 2Cook noodles according to package directions. Drain well then place in prepared baking dish.

Step 3Drop the refried beans by spoonful onto the top of the noodles to evenly cover as best as you can. Sprinkle the crushed tortilla chips on top of the refried beans.

Step 4In pot or skillet cook beef over medium heat - with the chopped green onion - until no longer pink then drain well. Return meat to pan and stir in tomato sauce, water, green chilies and taco seasoning. Stir well to combine. Bring to a boil then reduce heat and simmer - uncovered - for 5 minutes.

Step 5Spread beef mixture on top of the noodles then sprinkle with half of the shredded cheese. Bake - uncovered - until cheese is melted which will be about 10-15 minutes. Remove from oven and allow to stand for about 5 minutes.

Step 6Serve hot topped with lettuce, tomatoes, green onions, olives, avocado, the remainder of the shredded cheese, taco sauce and finally a dollop of sour cream.
