This isn't the usual Shepherd's pie, but it's a delicious Shepherd's pie.

Ingredients

  • SWEET POTATO
  • 4 large sweet potatoes
  • 4 tablespoons butter
  • salt and pepper
  • splash of half and half
  • PIE
  • 1 medium onion, rough chop
  • 1 large carrot, rough chop
  • 2 stalks celery, rough chop
  • 1 tablespoon olive oil
  • - salt
  • 8 ounces shiitake mushroom, sliced
  • 1 pound ground beef
  • 4 cloves garlic, minced
  • 1/2 cup dry vermouth
  • 6 ounces can tomato paste
  • 2 cups tomato sauce
  • 1/2 cup sun-dried tomatoes chopped
  • 2 bay leaves
  • 1 bundle of thyme tied with butchers twine
  • 2 teaspoons red pepper flakes
  • 1 1/2 cups frozen peas
  • 1 cup shredded sharp cheddar cheese
  • chives and fresh thyme, for garnish

How To Make sweet potato sheperd's pie

  • Step 1
    Preheat the oven to 400 degrees F. Poke the potatoes and wrap in foil, and place in the oven and bake for 1 hour.
  • Step 2
    Meanwhile, make the pie. Add the carrots, onion, and celery to a food processor and process to a paste. Add the oil to a Dutch oven and add the paste, and season with salt. Cook for about 20 minutes. Add the mushrooms and cook for another 10 minutes. Add the ground beef and garlic and season with salt. Once the beef is cooked, add the tomato paste and vermouth.
  • Step 3
    Cook 10 minutes, then add the tomato sauce, sun-dried tomatoes, bay leaves, thyme bundle, and red pepper flakes. Cook, stirring often for 20 minutes. Taste and adjust for salt. Add the frozen peas and cook another 5 minutes.
  • Step 4
    Once the potatoes are soft, remove from the oven and let cool a bit. Pull the skin off the potatoes and pass them through a ricer into a large bowl with the butter. Once all the potatoes are passed through the ricer, add the half and half until the desired consistency. Season with salt and pepper.
  • Step 5
    Remove the thyme bundle and bay leaves, and pour the meat mixture into a square or round baking pan. Sprinkle the cheese over the meat mixture. Spread the potatoes over the cheese and top with fresh thyme and chives Bake at 400 degrees for about 20 minutes. Let sit 15 minutes and serve.
