Ingredients
- 2 tablespoons vegetable oil
- 2 cups green bell pepper, chopped
- 2 cups onion, chopped
- 4 cloves garlic, finely chopped
- 8 skinless, boneless chicken breasts, chopped
- 48 ounces salsa
- 4 ounces sliced olives
- 12 corn tortillas, cut in halves
- 4 cups monterey jack cheese, shredded
- 2 cans cream of mushroom soup
- 2 cans cream of chicken soup
How To Make spicy chicken tortilla casserole

Step 1Preheat oven to 350F. Spray a 13x9-inch baking dish with cooking spray.

Step 2Saute bell pepper, onion, and garlic in oil in a large skillet for 2-3 minutes or until tender.

Step 3Add chicken and cook until done.

Step 4Stir in salsa, olives, and soups.

Step 5Spread 1/2 of the tortillas in the prepared baking dish. Top with 1/2 soup mixture and 1/2 cheese. Repeat layers with cheese on top of casserole.

Step 6Cover and bake 20-25 minutes or until cheese is melted.
