spicy breakfast dinner
I found this on the internet and I changed it a lot for my liking and it is sure easy and very tasty. I love that everything is in one pan so I know that when I'm short on time this is the road I want to take. You can use a sage sausage if you do not like it spicy and switch the cheese if you prefer something else. I use 2-cps of cheese that is what we like and franks hot sauce is more flavorful then hot but put in or leave out your choice. I like a kick to my food. Ingredients
- 1 plus pound bulk hot italian sausage
- 1 pound bag of frozen shredded potatoes
- 1 stick butter, melted
- 1-2 cup shredded cheddar cheese
- 1/2 cup small diced onions
- 1 - 16 ounces container of small curd cottage cheese
- 6 large eggs (beaten in separate bowl)
- 1 tablespoon oregano, and fresh garlic
- 1 teaspoon salt, pepper, celery seed
- 1/4or less cup franks hot sauce

Step 1Grease a 9x13 glass pan and set aside Brown your sausage with onions and garlic till crumbly. Set aside to cool

Step 2In a large bowl add your shredded potatoes that you have partially thawed and put melted butter over the potatoes add your seasonings. Now dump in 9x13 glass pan and line the sides and bottom with shredded potatoes.

Step 3Now using that same bowl you used to coat the potatoes mix the sausage,cheddar cheese, and cottage cheese . In a med size bowl mix your eggs and add your hot sauce then dump that onto your sausage mixture and fold all together.

Step 4Turn oven to 375* and preheat . Now pour over the potato mixture. Bake 1 hour uncovered. Let cool for 5 minutes before servinga
