Enjoy the spiciness of this skillet dinner. If you like spice, this is the meal for you, with chili powder, garlic powder, paprika, and my favorite Rotel. All the makings of a Mexican meal topped with sour cream and green onion can’t you just wait to make this meal?

Ingredients
- 1 pound ground beef
- 1/2 large yellow onion
- 1/2 pint cherry tomatoes
- 1 can Rotel (10 oz)
- 1 tablespoon chili powder
- 1 can diced mild green chilies
- 10 small yellow corn tortillas cut into quarters or bite-size pieces
- 2-3 cups beef broth or water
- 2 tablespoons paprika or smoked paprika
- 1 teaspoon garlic powder with parsley
- 1-1/2 cup Mexican blend shredded cheese
- 1 can black beans, rinsed and drained
- 1 bunch green onions, chopped greens only
How To Make spicy beef taco skillet dinner

Step 1In a large tall skillet brown ground beef on medium/high heat. Sauté onions.

Step 2Add in seasonings and Rotel. Add in black beans and diced green chilies. Cut stacks of corn tortillas into quarters. Do half of them at a time.

Step 3Add tortilla pieces into skillet. Toss to coat everything. Add in beef broth and stir once again making sure that all the tortillas are saturated.

Step 4Stir in cherry tomatoes and cover with a lid. Simmer for 10 minutes after stirring well.

Step 5If it seems to be sticking at a little, add more broth or water. Stir again. It should be thick. Sprinkle cheese evenly over the top and return the lid to the top to melt the cheese. Turn off the burner and secure toppings.

Step 6Serve hot and enjoy.
