spanish chicken taco skillet
This is my take on a taco skillet dinner. I like to use ingredients I already have at my disposal, chicken breast, black beans, mild green chilies, and bell peppers, along with chili powder, onion powder, paprika, and non-dairy plain yogurt. The yogurt makes it creamy and delicious. We added sliced black olives as well. How could you go wrong with all those ingredients? I am lactose intolerant, so the plain yogurt with all the other ingredients didn’t make it taste like there was even yogurt in it. The crunch of the tortilla chips on top. Adding Mexican blend shredded cheese at the end, yum!

Ingredients
- 1 pound boneless skinless chicken breast, cooked and shredded or chopped
- 1 medium green bell pepper, chopped
- 1 medium red bell pepper, chopped
- 1 medium yellow bell pepper, chopped
- 1 cup salsa, mild
- 1-4 ounce mild green chilies, do not drain
- 1 can black beans, rinsed and drained
- 1 cup non-dairy yogurt
- 1 tablespoon chili powder
- 1 tablespoon paprika
- 1 tablespoon onion powder
- 1 teaspoon garlic powder
- 1-1/2 cup Mexican style shredded cheese
- tortilla chips, crushed
How To Make spanish chicken taco skillet

Step 1To a tall nonstick skillet, add 3 tablespoons of oil. I like to use canola or olive oil. Turn the skillet to medium heat.

Step 2Place cooked shredded or chopped chicken into the skillet. Coat chicken with oil and continue to heat chicken through. Add in chop bell peppers and black beans, adding in chili powder, paprika, onion powder, and garlic powder.

Step 3Stir until everything is combined. Add into that same skillet mild green chilies and salsa. Stir once again.

Step 4Add in yogurt and then turn down your heat. Slowly stir to combine everything and let it simmer.

Step 5Once thoroughly heated, through and bubbling, turn off the skillet and sprinkle on cheese. Top with a lead until cheese is melted.

Step 6Crunch up some tortilla chips and sprinkle on individual portions for each dish. If you have any chopped green onion, you could do that before the chips as well, or add sour cream at the end as well.
