THIS IS ONE OF THOSE RECIPES THAT I MAKE WHEN I WANT TO USE UP EXTRA VEGETABLES. YOU CAN ADD ANY VEGETABLE TO THE MIX BUT THIS COMBINATION IS MY FAVORITE. I WILL ADD ZUCCHINI IN PLACE OF SUMMER SQUASH IF AVAILABLE. THIS IS A HEARTY MEAL AND A CROWD-PLEASER.

Ingredients For spaghetti squash w/beef & vegetable ragu casserole

    spaghetti squash, cut in half
  • 2
    yellow summer squash
  • 1 lb
    ground beef
  • 5 sm
    plum tomatoes, cut into chunks
  • 5
    green onions cut into small pieces
  • 4 sm
    bell peppers (different colors
  • 1/2 c
    mushrooms, cleaned and cut
  • 2 Tbsp
    garlic powder
  • 2 Tbsp
    onion powder
  • 1 tsp
    oregano
  • 1 tsp
    parsley
  • 2 Tbsp
    olive oil
  • 2 lg
    cans tomato sauce
  • 1 can
    tomato paste
  • SALT
    to taste
  • PEPPER
    to taste
  • YOU WILL NEED A 9X9 CASSEROLE DISH, LARGE NON-STICK POT, A SKILLET, COOKING SPRAY AND PARMESAN CHEESE TO COMPLETE THE DISH

How To Make spaghetti squash w/beef & vegetable ragu casserole

    PREHEAT THE OVEN TO 350

    IN A LARGE NON-STICK POT ADD ALL THE SAUCE. CUT THE SUMMER SQUASH INTO THIN SLICES AND ADD TO THE SAUCE

    CUT THE TOMATOES INTO SMALL CHUNKS AND ADD TO THE SAUCE. CUT THE PEPPERS INTO THIN SLICES, CUT IN HALF AND ADD TO THE SAUCE.

    IN A SKILLET BROWN THE GROUND BEEF, ADD THE DICED ONIONS AND THE PEPPERS, AND COOK UNTIL SOFT. THEN ADD TO THE SAUCE. ADD ALL THE SPICES,

    PUT THE SAUCE MIXTURE ON LOW HEAT AND SIMMER FOR 2 HOURS.

    DURING THE LAST 30 MINUTES OF SIMMERING THE SAUCE, CUT THE SPAGHETTI SQUASH IN HALF, THE LONG WAY, REMOVE THE SEEDS AND PLACE IN A PAN, SKIN SIDE UP AND COOK IN THE OVEN ADD WATER (JUST ENOUGH FOR THE BOTTOM OF THE SQUASH IS COVERED AND PUT IN THE OVEN FOR 30 MINUTES

    REMOVE THE SQUASH AND WITH A FORK, SCRAPE OUT THE INSIDE OF THE SQUASH.

    IN AN 9X9 GLASS CASSEROLE DISH, SPRAY WITH COOKING SPRAY. PLACE THE SPAGHETTI SQUASH ON THE BOTTOM. COVER THE SQUASH WITH THE SAUCE MIXTURE. ADD MOZZARELLA CHEESE OVER THE TOP. AND BAKE UNCOVERED FOR 30 MINUTES

    REMOVE FROM THE OVEN AND LET IT REST FOR ABOUT 10 MINUTES . ADD PARMESAN CHEESE TO THE TOP AND SERVE.
