Ingredients
- 1 1/2 tablespoons olive oil
- 2 large skinless, boneless chicken breasts, cubed
- ground Himalayan pink salt, to taste and divided
- freshly ground black pepper (I always use mixed peppercorns), to taste and divided
- 1 tablespoon butter
- 1 cup chopped yellow onions
- 1/2 cup chopped celery
- 1/2 cup chopped red peppers
- 1/2 cup chopped poblano peppers
- 2 large cloves garlic, minced
- 3 tablespoons unbleached all-purpose flour
- 1/2 cup low-sodium chicken broth
- 1 1/2 cups heavy cream
- 1 tablespoon Old El Paso taco seasoning
- 1/2 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme leaves
- 1 pound green beans, ends trimmed and blanched
- 2 cups tortilla chips, broken into smaller pieces
- 2 cups sharp cheddar cheese, grated
How To Make southwest chicken & green bean casserole

Step 1Preheat oven to 350 degrees F and lightly grease a 9 x 13-inch baking dish; set aside.

Step 2In a large skillet over medium heat, add oil. When hot, add chicken cubes; season with salt and black pepper. Sauté until no longer pink, about 4 minutes.

Step 3Using a slotted spoon, transfer the cubes to a bowl and set aside.

Step 4Melt butter in the skillet before adding onions and celery; season with salt. Sauté for 2 minutes.

Step 5Add red and poblano peppers; sauté for 2 minutes.

Step 6Add garlic and sauté for just 1 minute.

Step 7Coat the ingredients with flour and cook for 1:30 minutes. Pour in broth and stir constantly until the mixture thickens and becomes pasty.

Step 8Add heavy cream and seasonings; mix well. Add blanched green beans and return chicken with any accumulated juices. Stir to combine.

Step 9Pour the mixture into the prepared baking dish. Top with tortilla chips and grated cheese.

Step 10Cover with foil lightly greased and transfer to the preheated oven; bake for 15 minutes.

Step 11Uncover and bake until the cheese is melted and the top is golden brown, about 10 minutes.

Step 12Remove from the heat and let it rest for 10 to 15 minutes before serving.
