I consider this a comfort food meal. The ground beef and onion, garlic, and carrot mixture really add a lot of flavor to this rice skillet meal. The cream of mushroom soup and diced tomatoes had a bit of taste and color. This meal goes pretty quickly in my household.

Ingredients
- 1 pound ground beef
- 1 medium yellow onion, chopped
- 1 tablespoon garlic, minced
- 1 cup diced carrots
- 1 can condensed cream of soup (10 oz)
- 1 cup dry jasmine rice
- 2 1/2 cups low-sodium beef broth or stock
- 1 can diced tomatoes, undrained (15 oz)
- 1 teaspoon dry oregano
- 2 teaspoons paprika
- 1 cup shredded cheese
How To Make skillet hamburger and rice dinner

Step 1In a large deep nonstick skillet on medium-high heat, brown beef.

Step 2Add in onions and garlic and dice carrots. Add in salt and pepper as needed for taste.

Step 3Add in Jasmine rice then add in cream of mushroom soup and diced tomatoes with juices. Stir to combine everything.

Step 4Place a lid on it and let it simmer for 15 minutes or so until all the liquid is absorbed into the rice. Once all the liquid is absorbed, turn off the heat and sprinkle on the cheese. Replace the lid on the skillet until the cheese has melted.

Step 5Serve with fruit salad or garden salad. enjoy!
