This was originally presented in a cookbook from The First Pentecostal Church in Port Arthur called "Sharing Recipes" over 30 years ago! Our choir director, Brother Ivan Rogers' wife posted this recipe. We have tweaked it just a little...enjoy!

Ingredients For sister roger's pork chop casserole

  • 3 to 4
    pork chops, seasoned
  • 1/4 c
    oil
  • 1/2 c
    white onion, chopped
  • 2 c
    beef broth
  • 1 c
    rice
  • 1 tsp
    salt
  • 4 to 5
    green onions, chopped
  • 1 can
    sliced mushrooms

How To Make sister roger's pork chop casserole

    Cook pork chops in oil in iron skillet until lightly brown. Pour off all but 2 tablespoon oil and saute white onions in the oil. Add couple tablespoons of water to skillet and stir to get all the brown drippings.

    In 2 quart casserole, put raw rice and sprinkle 1 teaspoon salt.(May want to be careful with the salt if you beef broth is salty) Layer the cut greens onions and the mushrooms on top of the rice. Place browned pork chips on top of rice. Pour beef broth and drippings with onions on top of casserole.

    Cover with foil and bake in 350 oven for 45-60 minutes. Serve with favorite veggies and some crusty garlic bread! Yumminess...
