sausage & tortellini gratin
We love to add Italian sausage to pasta dishes. While we normally use the hot sausage version, mild Italian sausage works fine for this dish. Cooking time includes cooking time on the stovetop and baking time in the oven.

Ingredients
- 1/2 pound hot Italian sausage (or mild - your choice)
- 2-3 tablespoons onion, finely chopped
- 1 package fresh cheese tortellini (9 oz.)
- 3 cloves garlic, minced or pressed
- 1/2 cup whipping cream
- 1/2 cup chicken broth
- 1/2 cup parmesan cheese
- fresh parsley and basil to taste, reserve some of the parsley to add to breadcrumbs.
- black pepper, to taste
- 1/4 cup jarred roasted red bell pepper, chopped
- 2 tablespoons plain dry bread crumbs
- 1 1/2 tablespoons butter
How To Make sausage & tortellini gratin

Step 1Use packaged ground Italian sausage or remove whole sausages from casings and chop them up with a spoon in the skillet. Add onion and garlic; cook until sausage is crumbled, browned, and cooked through. Drain the mixture well on paper towels.

Step 2Meanwhile, cook cheese tortellini according to package instructions; drain and set aside.

Step 3Combine cream, broth, and black pepper along with 1/4 cup Parmesan, basil, red bell pepper, and parsley (leaving some parsley for bread crumb topping). Stir gently until mixed.

Step 4Add sausage to cream mixture and stir gently to combine. Place sausage mixture in a prepared baking dish. Combine breadcrumbs and parsley. Sprinkle over the tortellini mixture and dot with butter.

Step 5Bake at 325 degrees F for 40 minutes. Remove casserole. Sprinkle with remaining Parmesan cheese and bake an additional 5 minutes until lightly browned.
