We love to add Italian sausage to pasta dishes. While we normally use the hot sausage version, mild Italian sausage works fine for this dish. Cooking time includes cooking time on the stovetop and baking time in the oven.

Ingredients For sausage & tortellini gratin

1/2 lbhot Italian sausage (or mild - your choice)

2-3 Tbsponion, finely chopped

1 pkgfresh cheese tortellini (9 oz.)

3 clovegarlic, minced or pressed

1/2 cwhipping cream
-
1/2 cchicken broth
-
1/2 cparmesan cheese
-
fresh parsley and basil to taste, reserve some of the parsley to add to breadcrumbs.

black pepper, to taste

1/4 cjarred roasted red bell pepper, chopped

2 Tbspplain dry bread crumbs

1 1/2 Tbspbutter
How To Make sausage & tortellini gratin

1Use packaged ground Italian sausage or remove whole sausages from casings and chop them up with a spoon in the skillet. Add onion and garlic; cook until sausage is crumbled, browned, and cooked through. Drain the mixture well on paper towels.

2Meanwhile, cook cheese tortellini according to package instructions; drain and set aside.

3Combine cream, broth, and black pepper along with 1/4 cup Parmesan, basil, red bell pepper, and parsley (leaving some parsley for bread crumb topping). Stir gently until mixed.

4Add sausage to cream mixture and stir gently to combine. Place sausage mixture in a prepared baking dish. Combine breadcrumbs and parsley. Sprinkle over the tortellini mixture and dot with butter.

5Bake at 325 degrees F for 40 minutes. Remove casserole. Sprinkle with remaining Parmesan cheese and bake an additional 5 minutes until lightly browned.
