Ingredients
- 1 tablespoon olive oil
- 4 slices bacon
- 1 large onion, chopped
- 5 cloves garlic, minced
- 1 Eckrich smoked sausage, cut into pieces
- 2 boneless skinless chicken thighs, cut into chunks
- 2 tablespoons tomato paste
- 1/4 cup white wine
- 2 cans cannellini beans drained (15 oz)
- 2 cups chicken stock
- 1 cup frozen peas
- 1 pint cherry tomatoes
- salt and pepper
- CRUNCHY TOPPING
- 1 cup Panko bread crumbs
- 1/4 cup fresh parsley chopped
- 1/4 cup melted butter
- salt
How To Make sausage, chicken, and white bean casserole

Step 1Cut the bacon into pieces and add the olive oil to a Dutch oven and cook the bacon until crisp. Remove the bacon to a plate and set aside.

Step 2Add the onion and garlic to the bacon grease in the pan and cook for 5 minutes.

Step 3Add the sausage and chicken. Brown the meat. Stir in the tomato paste.

Step 4Add the wine and let most evaporate. Add the chicken stock, beans, peas, and cherry tomatoes. Season with salt and pepper. Mix all together and add the bacon back in.

Step 5Place in a 400-degree oven and bake for 45 minutes.

Step 6Mix the topping ingredients together. Sprinkle over the casserole and place back in the oven for 15 more minutes until the top is crispy.

Step 7Let rest for about 15 minutes and serve.
