This recipe is made up by Rose M. Helle. My computer is out of commission, so friend Robin is letting me type this on her computer. Was going to make a recipe I found in a magazine. Before I could make it, I lost the recipe causing me to make this one up from memory. The recipe called for Hash Brown potatoes lining the pie plate, but I had Potatoes O'Brien in my freezer and that sounded better and wanted to try that. The rest of the recipe is made up as I go. My apologies if I guessed wrong at the bake times.
1Thaw the Potatoes O'Brien and cut into small pieces. Cut all into small pieces and lay in the bottom of a prepared pie plate (sprayed with cooking spray). Bake at 350 degrees for 15 minutes. This will be your crust.
2In medium bowl, put the beaten eggs, add the sour cream and heavy cream and mix well.
3Fry the bacon until crisp, drain and add to the egg mixture.
Mix in the swiss cheese.
4Pour all into the prepared crust and bake for 35-40 minutes.
