quesadilla casserole

I got a spice seasoning packet at the store with this recipe on the back. It was absolutely fantastic! I altered it to suit my personal taste, which is not quite as spicy, and it is just super easy to make and quick to put together a filling meal for dinner.

Ingredients

  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon minced garlic
  • 1/2 teaspoon oregano leaves
  • 1/2 teaspoon crushed red pepper, optional (i omitted)
  • 1 pound hamburger
  • 1/2 cup chopped onion (or more, i like a med onion)
  • 16 ounces tomato sauce
  • 15 ounces black beans, drain and rinse
  • 8 3/4 ounces whole kernel corn
  • 4 1/2 ounces chopped green chilies (i drained, but you don't have to)
  • 6 - 8 inch flour tortillas
  • 2 cups shredded cheddar

How To Make quesadilla casserole

  • Step 1
    Brown hamburger and onion on med high heat then drain well. Add tomato sauce, beans, corn and chilies, mix well. Stir in all spices except red pepper if you are using it. Bring to boil, then reduce and simmer 5 min.
  • Step 2
    Spread 1/2 the beef mix on the bottom of a 9x13 sprayed with PAM. Top with 3 tortillas, overlapping as needed. Layer with 1/2 of the remaining beef mix and 1/2 of the cheese. Repeat with remaining tortillas, beef and cheese.
  • Step 3
    Bake at 350 degrees 15 min or until heated through. Let stand 5 min. Serve.
