Thanksgiving leftovers need to be utilized in some way. We like making hodgepodge meals, and this one lends itself very nicely to a bowl meal. We use orzo pasta because orzo is fun! It cooks quickly and evenly, and it picks up the flavors around it, so it's a win all the way around. We make this with chicken sometimes, and when we have asparagus, I love to sauté the asparagus, then cut and add to this dish - delicious! You can make this 'soupy' by adding milk or cream. It is quick, easy, inexpensive, and very filling.

Ingredients

  • 2 tablespoons butter
  • 4 ounces fresh mushrooms, cleaned & sliced, more if desired
  • 2 tablespoons finely chopped onion
  • 1/2 cup uncooked orzo
  • 2 cups broth - chicken, turkey or vegetable
  • 1/4 teaspoon Italian seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 ounce cream cheese
  • 1/2 cup steamed broccoli, cut into smallish pieces - more if desired
  • 3/4 cup cooked turkey or chicken
  • 1 - 2 tablespoons canned onion rings, chopped

How To Make orzo turkey bowl

  • Step 1
    Melt butter in a large saucepan over medium-high heat.
  • Step 2
    When the butter is melted, toss in the mushrooms and onion and cook - stirring frequently - until the mushrooms are lightly caramelized and the onions are softened.
  • Step 3
    Add the uncooked orzo, broth, and seasonings. Stir to mix.
  • Step 4
    Bring to a boil, then reduce the heat to low and cook - stirring frequently - until the orzo is done, which should take about 9 minutes.
  • Step 5
    Once the orzo is done, add the cream cheese and stir until it is melted.
  • Step 6
    Carefully fold in the broccoli and turkey.
  • Step 7
    If there is little or no sauce, add some milk or cream and heat through.
  • Step 8
    Serve hot, in bowls, then add salt and pepper to taste and garnish with the crushed onion rings.
  • Step 9
    NOTE: This recipe is also really good with asparagus in place of the broccoli and chicken in place of the turkey.
