Easy peasy and tasty. I make this a lot in my motor home.

Ingredients For one pot cheeseburger casserole

  • 1 Tbsp
    oil
  • 1 1/2 lb
    ground beef
  • 1 lg
    onion, diced
  • salt and pepper, to your taste
  • 28 oz can
    diced tomatoes, undrained
  • 8 oz can
    tomato sauce
  • 2 c
    chicken broth
  • 1/4 c
    ketchup
  • 2 tsp
    yellow mustard
  • 1 lb
    rotini pasta
  • 2 c
    shredded cheddar cheese
  • 1 md
    tomato, diced
  • 2-4
    green onions, sliced
  • 2 c
    water

How To Make one pot cheeseburger casserole

    Heat oil in skillet; add ground meat and onion. Cook until beef has browned, about 3-5 minutes. Season with salt and pepper. Drain excess fat.

    Stir in diced tomatoes, tomato sauce, chicken broth, ketchup, mustard, pasta and 2 cups water. Bring to a boil; corner and simmer until pasta is cooked through, about 13-16 minutes.

    Remove from heat and top with cheese. Cover until cheese has melted, about 2 minutes. Garnish with fresh tomato and green onions
