old-fashioned hamburger casserole

I found this in a 10-year-old magazine that stated that the original was from 1950! So by now, it's a 75-year-old recipe with some updated tweaks. Just like me!

Ingredients

  • 1 pound potatoes (red, Yukon gold or similar)
  • 1/4 cup sour cream or plain yogurt
  • 1/4 cup milk
  • 2 ounces cheddar cheese, grated (any variety)
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 1 large carrot, sliced
  • 1 pound lean ground beef
  • 1 tablespoon tomato paste
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon flour
  • 1 teaspoon fresh thyme leaves (use less if dried)
  • 14 ounces diced tomatoes, drained (1 can)
  • 1 cup beef or chicken broth

How To Make old-fashioned hamburger casserole

  • Step 1
    Oven will need to be preheated to 425ºF, but not yet! Boil the potatoes with some salt until just tender, mash with sour cream, milk, cheese, and 1/4 tsp each salt and pepper. Set aside.
  • Step 2
    Meanwhile, heat oil in a cast iron skillet, add onion and cook, stirring occasionally until translucent. Add carrot and cook, covered, stirring occasionally until just tender - about 5 or 6 minutes.
  • Step 3
    Add beef and cook, breaking up until no longer pink. Add tomato paste and cinnamon. Then cook for about 1 minute.
  • Step 4
    Add the flour, thyme, 1/4 tsp salt, and pepper. Continue to cook, stirring for another minute.
  • Step 5
    (Preheat oven now - you know how long your oven takes!) Add tomatoes and broth. Gently simmer until the liquid has almost evaporated. Spoon the reserved potatoes over the beef mixture. If you use a fork to make little ridges in the potatoes, they will be crispier. Bake until potatoes are golden brown and slightly crisp for 15-20 minutes.
  • Step 6
    Additionally, sprinkle about a tablespoon of cheese on top of the potatoes and broil for a minute or two. Just to make it prettier!
