This new recipe for pork casserole has the kick of nachos. It's filled with bacon, boneless pork chops, jalapenos, diced tomatoes, kielbasa sausage, fusilli pasta and Mexican cheese blend. It's perfect with a side salad and cornbread.

Ingredients

  • 1 cup crushed nacho flavored tortilla chips
  • 2 cups crumbled cooked bacon, divided
  • 3 cups dry fusilli pasta
  • 3 teaspoons canola oil
  • 6 - fresh boneless pork chops, sliced
  • 1 tablespoon steak seasoning
  • 2 teaspoons red pepper flakes
  • 1 teaspoon garlic powder
  • 1 pound kielbasa sausages, sliced into 1/2-inch pieces
  • 1 - vidalia sweet onion, peeled and sliced
  • 1 - medium tomato, seeded and diced
  • 1 cup sliced pickled jalapenos
  • 1 - packet taco seasoning mix
  • 16 ounces cream cheese, softened
  • 3/4 cup sour cream
  • 1 cup processed cheese sauce
  • 1 can condensed cheddar cheese soup
  • 2 cups shredded Mexican cheese blend

How To Make nacho pork casserole

  • Step 1
    Preheat oven to 400 degrees F. Lightly grease a medium baking dish. Add crushed tortilla chips and 1 cup cooked bacon bits.
  • Step 2
    Bring a large pot of lightly salted water to a boil. Place fusilli pasta in the pot and cook for 8 to 10 minutes; drain.
  • Step 3
    Heat the oil in a large skillet over medium heat. Add pork chop pieces and saute for 5 minutes. Season with steak seasoning, red pepper flakes and garlic powder and saute again for 3 minutes. Remove from the skillet, transfer to a large platter and set aside.
  • Step 4
    Add sliced kielbasa sausages to the same skillet with heated oil and saute for 5 minutes until brown. Stir in sliced onion, diced tomatoes and jalapenos, season with taco seasoning mix, and cook about 8 minutes.
  • Step 5
    In a large bowl, combine cream cheese, sour cream, cheese sauce and soup, and whisk together until blended. Mix in cooked pasta, sauteed pork chop pieces, and kielbasa sausage mixture.
  • Step 6
    Transfer into a prepared baking dish. Sprinkle with Mexican cheese blend and remaining bacon bits.
  • Step 7
    Bake 30 minutes in the preheated oven until the cheese is bubbly.
