1Heat oven to 350. Lightly spray a 9" x 13" casserole pan w/ cooking spray. Make pasta as directed, drain and put back in pan. Add a little olive oil and set aside.
2In medium bowl,mix egg, ricotta cheese, a 1/4 cup parmesan cheese, garlic, pepperoni, salt, peppe and 1 tbsp parsley. Mix well.
3Place chicken breasts in bottom of pan and place 2 tbsps of filling on short end of each chicken. Roll each chicken up and place seam side down in pan. Pour marinara sauce over chicken, top w/ mozzarella cheese, the remaining parmesan cheese and parsley. Cover pan w/ foil. Bake 35 mins. Serve over pasta.
