mexican casserole
My sister in law, Laura, had us over years ago and served this delicious and a little different Mexican casserole. My boys always liked it. Was it the addition of their favorite, Ranch style beans maybe? Note: I use 2 lbs ground beef and 1 can green chilis. We're a meat eating family!

Ingredients
- 1 package corn tortillas, 12 pk
- 1 1/2 pounds ground beef
- 1 - onion medium chopped
- 1 pound velveeta cheese grated or small pieces
- 1 can ranch style beans
- 1 can cream of chicken soup
- 1 can rotel tomatoes w/chiles
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- - salt and pepper
How To Make mexican casserole

Step 1Cook ground beef and onions in large skillet until browned. Add beans and seasonings and mix well.

Step 2Grease 3 qt baking dish. Line bottom with 6 tortilla strips. Cover with half of meat mixture, and half of cheese. Repeat with last six tortillas cut in strips, meat, then cheese.

Step 3Mix soup and tomatoes w/chiles and pour over the top . Cover with foil and bake at 325 degrees for 1 hour.
