Mexican Casserole

My sister in law, Laura, had us over years ago and served this delicious and a little different Mexican casserole. My boys always liked it. Was it the addition of their favorite, Ranch style beans maybe?
Note: I use 2 lbs ground beef and 1 can green chilis. We're a meat eating family!

    corn tortillas, 12 pk
  • 1 1/2 lb
    ground beef
  • 1
    onion medium chopped
  • 1 lb
    velveeta cheese grated or small pieces
  • 1 can(s)
    ranch style beans
  • 1 can(s)
    cream of chicken soup
  • 1 can(s)
    rotel tomatoes w/chiles
  • 1 Tbsp
    chili powder
  • 1 tsp
    garlic powder
  • ·
    salt and pepper

How to Make Mexican Casserole


  1. Cook ground beef and onions in large skillet until browned. Add beans and seasonings and mix well.
  2. Grease 3 qt baking dish. Line bottom with 6 tortilla strips. Cover with half of meat mixture, and half of cheese. Repeat with last six tortillas cut in strips, meat, then cheese.
  3. Mix soup and tomatoes w/chiles and pour over the top . Cover with foil and bake at 325 degrees for 1 hour.
