- 1 box - pasta of choice
- 1 can - fire roasted tomatoes drained
- 1/2 can - black beans rinsed
- 1/2 cup - frozen corn
- 2 cups - shredded chicken (or browned meat)
- 1 pkg - taco seasoning mix
- 2 cups - shredded cheese
- 1/4 cup - water
- 1/3 cup - salsa
How To Make mexican casserole

Step 1Start by browning meat if you choose to use any. Next mix low sodium taco seasoning packet with 1/4 cup water. Drain all canned foods

Step 2Cook pasta per package instructions, drain. In large bowl combine all ingredients except shredded cheese.

Step 3Pour ingredients into a casserole dish and top with shredded cheese. Bake 350 for 15-20 minutes or until cheese is melted.
