This Mexican inspired casserole is a delicious and easy recipe! It's great for using left over rotisserie chicken or even thanksgiving turkey! Tons of flavor and few ingredients make this recipe a sure fire go to!

Ingredients

  • 1 box - pasta of choice
  • 1 can - fire roasted tomatoes drained
  • 1/2 can - black beans rinsed
  • 1/2 cup - frozen corn
  • 2 cups - shredded chicken (or browned meat)
  • 1 pkg - taco seasoning mix
  • 2 cups - shredded cheese
  • 1/4 cup - water
  • 1/3 cup - salsa

How To Make mexican casserole

  • Step 1
    Start by browning meat if you choose to use any. Next mix low sodium taco seasoning packet with 1/4 cup water. Drain all canned foods
  • Step 2
    Cook pasta per package instructions, drain. In large bowl combine all ingredients except shredded cheese.
  • Step 3
    Pour ingredients into a casserole dish and top with shredded cheese. Bake 350 for 15-20 minutes or until cheese is melted.
