This Mexican inspired casserole is a delicious and easy recipe! It's great for using left over rotisserie chicken or even thanksgiving turkey! Tons of flavor and few ingredients make this recipe a sure fire go to!

Ingredients

  • 1 box
    pasta of choice
  • 1 can
    fire roasted tomatoes drained
  • 1/2 can
    black beans rinsed
  • 1/2 cup
    frozen corn
  • 2 cups
    shredded chicken (or browned meat)
  • 1 pkg
    taco seasoning mix
  • 2 cups
    shredded cheese
  • 1/4 cup
    water
  • 1/3 cup
    salsa

How to Make Mexican casserole

Step-by-Step

  1. Start by browning meat if you choose to use any. Next mix low sodium taco seasoning packet with 1/4 cup water. Drain all canned foods
  2. Cook pasta per package instructions, drain. In large bowl combine all ingredients except shredded cheese.
  3. Pour ingredients into a casserole dish and top with shredded cheese. Bake 350 for 15-20 minutes or until cheese is melted.
