Ingredients
- 2 cans black beans
- 3 garlic cloves, minced
- 1/2 cup vegetable broth
- 1 medium chorizo (mexican sausage, mild or medium
- 1 cup onions, small white
- 1/2 cup green bell peppers
- 1/2 tablespoon cumin
- 1 teaspoon black pepper
- 1/4 teaspoon salt
- 2 tablespoons cilantro, fresh
- 4 whole wheat tortillas
- 12 ounces salsa, tomato-based
- 1 cup cheddar cheese, shredded
- 1 cup oaxaca, shredded
- 1 cup mexican crema
How To Make mexican black bean casserole

Step 1Brown chorizo, add chopped onion, and chopped green pepper until soft.

Step 2Add garlic soften, drain and add black beans and broth, continue cooking for 3 minutes. Add cumin, black pepper, salt, and cilantro, stir to combine.

Step 3Spray bottom of an 8x8 inch casserole dish with non-stick spray. Add a tortilla, 1/4 of the black bean mixture, 1/4 salsa, 1/4 cheddar cheese, continue layering until all ingredients have been used. Top casserole with all remaining cheeses.

Step 4Cover casserole with foil, and bake at 375 degrees for 20 minutes. Remove foil , continue cooking 8-10 minutes. remove from oven and drizzle with the crema.
