Ingredients

  • - butter
  • - 1/2 (8 oz) multi grain bread loaf, cut into 3/4 inch cubes
  • - 3 tbsp. olive oil
  • - 2 shallots, thinly sliced
  • - 2 garlic cloves, minced
  • - 16 oz. grape tomatoes, halved
  • - 1 cup sliced green olives
  • - salt and pepper
  • - 1 packed cup chopped fresh basil leaves
  • - 1 1/2 cups shredded parmesan cheese
  • - 7 large eggs, room temperature
  • - 1 1/4 cups whole milk
  • - 1 tsp. salt
  • - 1/2 tsp. pepper

How To Make mediterranean bread pudding

  • Step 1
    Preheat oven to 375. butter a 13 x 9 inch glass baking dish. Add bread cubes and set aside.
  • Step 2
    In skillet, heat oil over medium high heat. Add shallots and garlic; cook, stirring constantly, til fragrant, about 1 minute. Add tomatoes, olives, and salt and pepper to taste. Cook til slightly soft, about 2 minutes. Remove from heat and stir in basil.
  • Step 3
    Pour tomato mixture and Parmesan over the bread cubes and stir to mix. In a bowl, beat eggs, milk, salt and pepper til smooth. Pour over brad mixture and toss to coat. Bake til puffed and golden, about 25 minutes. Remove and let cool 5 minutes. Cut into squares and serve. Make 6 to 8 servings.
