macaroni and cheese with caramelized mushrooms
I created this new macaroni and cheese recipe. It's an extreme recipe, adding caramelized mushrooms for the first time ever.

Ingredients
- 1 cup shredded mild cheddar cheese
- 1 cup panko bread crumbs, divided
- 16 ounces dry elbow macaroni
- 1 tablespoon avocado oil
- 3/4 cup dark brown sugar
- 6 baby portabello mushrooms, sliced
- 1 tablespoon cajun seasoning
- 1 packet dry onion soup mix
- 2 teaspoons ground black pepper
- 2 tablespoons margarine
- 1 cup heavy whipping cream
- 1 can evaporated milk
- 8 ounces cream cheese, softened
- 1 cup half and half
- 8 ounces gouda cheese, shredded and divided
- 1 cup cubed processed American cheese
- 3 tablespoons grated Parmesan cheese
How To Make macaroni and cheese with caramelized mushrooms

Step 1Preheat oven to 375 degrees F.

Step 2Coat a 9x13-inch baking dish with cooking spray. Add shredded mild cheddar cheese and 1/2 cup panko bread crumbs; mix well.

Step 3Fill a pot with lightly salted water and bring to a boil. Add macaroni and return to a boil. Cook and occasionally stir until the macaroni has cooked through, but is still firm to the bite, about 8 minutes; drain.

Step 4Heat avocado oil and brown sugar in a large, deep skillet over medium heat. Add sliced portabello mushrooms and saute for 5 minutes until the mushrooms are caramelized.

Step 5Stir in cajun seasoning, dry onion soup mix and black pepper. Remove from heat and set aside.

Step 6Heat margarine in a medium saucepan over medium-low heat. Combine heavy whipping cream, evaporated milk, cream cheese and half and half; whisk together for 4 minutes until blended.

Step 7Stir in 1 cup shredded gouda cheese and cubed American cheese and let it simmer for 5 minutes until the cheeses are melted.

Step 8Add cooked macaroni and caramelized mushroom mixture; mix well until combined. Remove from heat.

Step 9Spoon evenly into the prepared baking dish. Sprinkle with grated Parmesan cheese, remaining shredded gouda cheese and panko bread crumbs.

Step 10Bake for 25 minutes or until golden brown and the cheese is melted.
