Ingredients

  • CHICKEN
  • 1 whole chicken
  • 1 stalk celery
  • 2 sprigs parsley
  • salt
  • MAC & CHEESE
  • 1 stick butter
  • 4 tablespoons flour
  • 1 cup heavy cream
  • 1/4 teaspoon nutmeg
  • 8 ounces macaroni
  • 2 cups grated Parmesan cheese

How To Make macaroni and cheese stuffed roasted chicken

  • Step 1
    Place the chicken in a large pot of salted water. Make sure the chicken is covered. Add the celery stalk and parsley sprigs. Bring to a boil, cover, and cook until tender; 1 hour or more, depending on how big the chicken is.
  • Step 2
    While the chicken is cooking, cook the macaroni in boiling salted water. Drain, reserving one cup of pasta water.
  • Step 3
    Whisk the butter and flour together in a pan and then slowly add the reserved pasta water and heavy cream. Whisk until thickened and add the nutmeg and season with salt and pepper.
  • Step 4
    Mix the macaroni into half of the sauce.
  • Step 5
    Preheat the oven to 400 degrees F. Place the chicken in a roasting pan.
  • Step 6
    Fill the cavity with the macaroni mixture. Place any extra around the chicken. Pour the remaining sauce over the chicken and top with cheese.
  • Step 7
    Roast for about 15 minutes until the cheese is golden.
