- 1/4 cup olive oil
- 3 bell peppers, any color, seeded and sliced
- 1 large onion, halved and sliced
- 2 cups cooked, shredded chicken
- 1 teaspoon salt
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon oregano
- 4 ounces cream cheese, softened
- 3/4 cup shredded cheddar, divided cheese
- 1/4 cup sliced black olives
- 2 tablespoons sliced pickled jalapeno peppers
- 1/2 cup sliced or shredded pepper jack cheese
- low-carb flour tortilla or wrap, optional
- GARNISHES
- 1/2 cup sour cream
- 1 cup shredded lettuce
- 1 cup chopped tomatoes
- 1 bunch chopped fresh cilantro
How To Make low carb oven chicken fajitas

Step 1Preheat oven to 350 degrees F and coat an 8x8-inch baking pan with half of the olive oil.

Step 2Add the other half of the olive oil to a skillet and cook the peppers and onions on medium high, stirring, until limp. Add the chicken, salt, and spices. Stir.

Step 3Add the cream cheese and 1/2 cup of the shredded cheddar cheese. Top with the olives and jalapenos. Cover with the remaining cheese.

Step 4Bake, uncovered, 25 minutes, until golden. Serve on a plate with garnishes or place a spoonful in a low-carb flour tortilla or wrap.
