Ingredients For louisiana cowboy cornbread casserole

  • 1/2 c
    sour cream
  • 3/4 c
    half and half
  • 3/4 c
    milk
  • 2
    large eggs
  • 2 box
    cornbread mix
  • 2 c
    crushed barbecue potato chips, divided
  • 2
    fresh jalapenos, chopped
  • 1 c
    shredded Monterey jack cheese
  • 2 lb
    ground beef
  • 1 lg
    vidalia sweet onion, peeled and chopped
  • 2
    banana peppers, sliced
  • 1 Tbsp
    steak seasoning
  • 1 tsp
    garlic powder
  • 2 tsp
    crushed red pepper flakes
  • 1 Tbsp
    cajun seasoning
  • 1 jar
    sliced mushrooms, drained
  • 1 can
    whole kernel corn, drained
  • 3 tsp
    creole mustard
  • 3/4 c
    hot and spicy barbecue sauce
  • 1 Tbsp
    dark brown sugar

How To Make louisiana cowboy cornbread casserole

    Preheat oven to 400 degrees F.

    In a large bowl, whisk the sour cream, half and half, milk and eggs together until smooth.

    Add the cornbread mixes and stir to combine. Add 1 cup crushed barbecue potato chips, chopped jalapenos and shredded Monterey jack cheese and stir to incorporate.

    In a large skillet, brown the ground beef over medium heat. Cook, stirring frequently, for 5 minutes until the beef is fully cooked and drain off excess grease.

    Add the diced vidalia onion and sliced banana peppers to the beef and continue cooking for 3 minutes or until the onion and peppers are tender. Season with steak seasoning, garlic powder, red pepper flakes, and cajun seasoning.

    Add the sliced mushrooms, whole kernel corn, creole mustard, barbecue sauce, and brown sugar to the beef mixture and continue cooking for another 5 minutes. Remove from heat and set aside.

    Spoon the beef mixture to a greased 9x13 baking dish and smooth out into an even layer.

    Pour the cornbread mixture over the beef mixture and carefully spread into an even layer. Sprinkle with remaining barbecue potato chips and lightly press them in.
