loaded skillet taco dinner
As a skilled cook, I can usually use ingredients that I have on hand to make a specific taco meal. I had a little bit of taco ingredients on hand and decided to whip up this easy, delicious taco dinner. Most of my meals I do in a skillet. This is my original recipe.

Ingredients
- 1 pound ground beef
- 1/2 large yellow onion, chopped
- 1 cup premade pico de gallo
- 1 package taco seasoning mix
- 1/2 can refried beans (15 oz)
- 2/3 cup water
- 1 can kidney beans, rinsed and drained (15 oz)
How To Make loaded skillet taco dinner

Step 1In a large nonstick skillet on medium/high heat, brown the ground beef. Do not drain off grease.

Step 2Add in chopped onions and sauté until translucent.

Step 3Add in the taco packet and water. Stir until it thickens slightly.

Step 4Add in one cup of your pico de gallo and continue to stir until combined. Turn down the heat slightly to medium.

Step 5Add in half a can of refried beans. If it seems to be really thick, you may add a little more water to your skillet so as not to have it stick to the skillet bottom. Continue to stir.

Step 6Add a layer of cheese on top. I use Colby Jack; you can use Mexican cheese or any cheese you like. Whatever is melty.

Step 7Secure a lid on top until the cheese melts. I always turn off my stove because my stove stays hot for a long time.

Step 8Serve it with a green salad or use tortilla scoops or tortilla chips with it. Enjoy a taco dinner with your family.
