This cheesy pasta tones down the spice of the Kimchi, and it's amazing.

Ingredients For kimchi mac & cheese

  • 2 Tbsp
    olive oil
  • 1 lb
    ground beef
  • 2 tsp
    Korean chili flakes
  • salt and pepper
  • 1 md
    onion, chopped
  • 4 clove
    garlic, minced
  • 1/4 c
    tomato paste
  • 2 Tbsp
    honey
  • 3 c
    beef or chicken stock
  • 2 Tbsp
    soy sauce
  • 8 oz
    pasta of choice
  • 1 c
    Kimchi, drained and chopped
  • 2 c
    shredded sharp cheddar cheese
  • 2 tsp
    Gochujang
  • 1 Tbsp
    fish sauce
  • chili crisp, for garnish

How To Make kimchi mac & cheese

    Add the olive oil to a large pot. Add the onion and sauté 3 minutes.

    Add the ground beef and garlic and cook. Break up the beef and cook until the meat is no longer pink. Stir in the Korean chili and honey.

    Make a well in the middle of the meat and add the tomato paste. Let cook about 3 minutes.

    Add the beef stock and soy sauce. Bring to a boil.

    Add the pasta. Lower heat, cover, and simmer about 15 minutes until the pasta is cooked.

    Stir in the Kimchi, Gochujang, and fish sauce.

    Taste and adjust seasoning. Serve with a little chili crisp on top.
