How to Make JEAN'S ZUCCHINI AND RICE

Step-by-Step

  1. Use a large skillet. Add about 2 Tablespoons water to skillet.
  2. Wash and slice zucchini. Put in skillet. Peel and slice onion. Add to skillet. Saute until tender. Add little more water if needed.
  3. Add uncooked rice and stir. Put lid on skillet and simmer until rice is done.
  4. Sprinkle half of mozzarella on zucchini mixture and let melt. Stir in until blended. Add rest of mozzarella and let melt. Enjoy!!
