Colorful and easy to make, this tasty one-pot recipe is a great meal to enjoy!

Ingredients

  • GNOCCHI
  • 1 1/2 pounds gnocchi (750 g)
  • 2 tablespoons butter
  • 1 tablespoon extra virgin olive oil
  • CASSEROLE
  • 1 1/2 cups finely chopped white onions
  • 1/2 cup finely chopped celery
  • 1 tablespoon olive oil, if needed
  • ground Himalayan pink salt, to taste
  • 1/2 cup finely chopped red peppers
  • 1 pound hot italian sausage, casings removed
  • 3 cloves garlic (large), pressed
  • 3 cups baby spinach, packed
  • 3 cups marinara sauce (700 ml)
  • 1/2 tablespoon italian seasoning
  • freshly ground black pepper, to taste (I always use mixed peppercorns)
  • 1 1/2 cups grated mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh chopped parsley, for garnish

How To Make italian gnocchi casserole

  • Step 1
    GNOCCHI... Preheat oven to 350ºF.
  • Step 2
    In a 2-quart oven-proof skillet over medium heat. Add butter and oil.
  • Step 3
    When it starts sizzling, add gnocchi and toss around to coat. Cook according to package directions minus 2 minutes.
  • Step 4
    Spoon gnocchi into a bowl and set aside.
  • Step 5
    CASSEROLE... In the same skillet, add onions and celery; season with salt. Sauté for 3 minutes, scraping the bottom of the pan to dislodge any brown bits; add oil if needed.
  • Step 6
    Add red peppers and sauté for 2 minutes.
  • Step 7
    Add hot Italian sausage and break the meat into small pieces. Cook until no longer pink but halfway through cooking add garlic; continue cooking until the meat is done.
  • Step 8
    Add baby spinach and toss it around. Cook until wilted, about 1 minute.
  • Step 9
    Add gnocchi and pour in marinara sauce; add Italian seasoning and freshly ground black pepper. Stir until combined before adding cheeses.
  • Step 10
    Bake for 15 to 18 minutes or until cheeses are melted and the top is golden brown.
  • Step 11
    Remove from the heat and let it rest for 10 minutes before garnishing with chopped parsley.
