I went foraging through my veggie drawer and got the idea for this because all my peppers were already chopped. The family loved it! Sometimes, you just have to improvise!

Ingredients For inside out stuffed peppers

1 Tbspolive oil

2-3 clovegarlic, minced

1/2 conions, chopped

2 cbell peppers, chopped (i used 2 cups of combined yellow, red and green)

2 ccooked rice
-
1 lbground beef, lean
-
1/2 tspparsley
-
1/2 cparmesan (plus some for topping)

1 1/2 ctomato sauce
-
salt and pepper, to taste
-
1 cmozzarella, shredded (for top of casserole)
How To Make inside out stuffed peppers

1Pour olive oil in large skillet, on medium high heat. Add garlic, onions and peppers; cook until just tender, about 8-10 minutes. Remove to a bowl; set aside.

2Place ground beef in the same pan and brown; drain any extra fat. Add peppers and onions mixture back to the pan with beef, stir together.

3Add cooked rice, parsley, Parmesan and tomato sauce, salt and pepper. Mix well and cook together for another few minutes.

4Pour into a prepared 7X11" baking dish. Top with the mozzarella and a sprinkling of more Parmesan. Bake at 375'F. for 15-20 minutes or until cheese is melted and casserole heated through.
