I remember my Mom making this "hot salad" when her card club would come over. It's one of those food memories I felt the need to revisit.

Ingredients
- 4 cups cooked chicken breast
- 2 tablespoons lemon juice
- 3/4 cup mayonnaise
- 1/2 teaspoon salt
- 2 ounces pimento, diced
- 2 cups celery, diced
- 4 - hard boiled eggs, sliced
- 3/4 cup cream of chicken soup
- 2 teaspoons onion, finely minced
- 1 cup cheddar cheese, shredded
- 1 cup panko bread crumbs
- 3 tablespoons butter melted
- 2/3 cup almonds, browned and chopped
How To Make hot chicken salad

Step 1Combine chicken, lemon juice mayonnaise, salt, cheese, celery, hard cooked eggs, pimentos, soup and onion.

Step 2Pour above ingredients in a buttered baking dish (9" x 13"). Refrigerate overnight.

Step 3Add melted butter to Panko crumbs.

Step 4Before baking top with buttered Panko and almonds

Step 5Bake 375° for 25 - 30minutes
