I remember my Mom making this "hot salad" when her card club would come over. It's one of those food memories I felt the need to revisit.

Ingredients

  • 4 c
    cooked chicken breast
  • 2 Tbsp
    lemon juice
  • 3/4 c
    mayonnaise
  • 1/2 tsp
    salt
  • 2 oz
    pimento, diced
  • 2 c
    celery, diced
  • 4
    hard boiled eggs, sliced
  • 3/4 c
    cream of chicken soup
  • 2 tsp
    onion, finely minced
  • 1 c
    cheddar cheese, shredded
  • 1 c
    panko bread crumbs
  • 3 Tbsp
    butter melted
  • 2/3 c
    almonds, browned and chopped

How to Make Hot Chicken Salad

Step-by-Step

  1. Combine chicken, lemon juice mayonnaise, salt, cheese, celery, hard cooked eggs, pimentos, soup and onion.
  2. Pour above ingredients in a buttered baking dish (9" x 13"). Refrigerate overnight.
  3. Add melted butter to Panko crumbs.
  4. Before baking top with buttered Panko and almonds
  5. Bake 375° for 25 - 30minutes
