I remember my Mom making this "hot salad" when her card club would come over. It's one of those food memories I felt the need to revisit.

Ingredients

  • 4 cups cooked chicken breast
  • 2 tablespoons lemon juice
  • 3/4 cup mayonnaise
  • 1/2 teaspoon salt
  • 2 ounces pimento, diced
  • 2 cups celery, diced
  • 4 - hard boiled eggs, sliced
  • 3/4 cup cream of chicken soup
  • 2 teaspoons onion, finely minced
  • 1 cup cheddar cheese, shredded
  • 1 cup panko bread crumbs
  • 3 tablespoons butter melted
  • 2/3 cup almonds, browned and chopped

How To Make hot chicken salad

  • Step 1
    Combine chicken, lemon juice mayonnaise, salt, cheese, celery, hard cooked eggs, pimentos, soup and onion.
  • Step 2
    Pour above ingredients in a buttered baking dish (9" x 13"). Refrigerate overnight.
  • Step 3
    Add melted butter to Panko crumbs.
  • Step 4
    Before baking top with buttered Panko and almonds
  • Step 5
    Bake 375° for 25 - 30minutes
