I created a new casserole recipe from my honey margarine creation on duck. It's good with mixed salad greens and some dinner rolls.

Ingredients

  • HONEY MARGARINE
  • 2 sticks margarine, sliced
  • 3/4 cup honey
  • DUCK CASSEROLE
  • 16 ounces dry cavatappi pasta
  • 2 1/2 tablespoons grated Parmesan cheese
  • 5 duck breasts (skin-on), sliced thick
  • 1 medium red bell pepper, seeded and chopped
  • 1 large yellow onion, peeled and diced
  • 3 cremini mushrooms, sliced
  • 1 tablespoon Creole seasoning
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 3 teaspoons ground black pepper
  • 1 cup heavy cream
  • 1/2 cup half and half
  • 8 ounces cream cheese, softened
  • 1 package Italian salad dressing mix
  • 1 cup shredded Parmesan cheese

How To Make honey margarine duck casserole

  • Step 1
    Preheat oven to 350 degrees F.
  • Step 2
    In a medium bowl, combine sliced margarine and honey; whisk together for 3 minutes until blended and smooth. Set aside.
  • Step 3
    Coat the bottom and sides of an 11"-by-8" baking dish with cooking spray.
  • Step 4
    Cook cavatappi pasta according to package directions; drain well.
  • Step 5
    Transfer to a large bowl. Add 3 tablespoons honey margarine and 3 tablespoons grated parmesan cheese; mix well with a fork. Set aside.
  • Step 6
    Heat 2 tablespoons honey margarine in a medium saucepan over medium heat. Add thick sliced duck breasts, chopped red bell pepper, diced yellow onion, sliced cremini mushrooms. Cook and saute for 6 minutes until the duck are well browned and the vegetables are tender.
  • Step 7
    Stir in 2 tablespoons honey margarine, Creole seasoning, ground cumin, garlic powder, and black pepper. Reduce to low heat.
  • Step 8
    In another medium bowl, combine heavy cream, half and half, cream cheese, Italian salad dressing mix, and 3 tablespoons honey margarine; whisk together for 2 minutes until blended and smooth.
  • Step 9
    Pour onto duck mixture into the saucepan. Stir well for 3 minutes. Remove from heat.
  • Step 10
    Layer half of cavatappi pasta mixture in a greased baking dish. Spoon half of the duck mixture. Sprinkle with 1/2 cup shredded parmesan cheese. Repeat layers. Top with remaining honey margarine.
  • Step 11
    Bake for 25 minutes or until is golden brown. Let stand for 10 minutes before serving.
