I find this chicken pot pie recipe to be truly delicious. It evokes memories of my grandmother's cooking. The dish is so tender it simply melts in your mouth, leaving you wanting to savor each bite.

    boneless, skinless chicken breast
  • 1 Tbsp
    cooking oil
  • 1 md
    onion
  • 4 Tbsp
    butter
  • 4 Tbsp
    all-purpose flour
  • 1 c
    chicken broth
  • 1/2 c
    milk, 2%
  • 1/4 tsp
    parsley, dried
  • 1/4 tsp
    chives, dried
  • 1/4 tsp
    Italian seasoning (optional)
  • 1/4 tsp
    black pepper
  • 3/4 tsp
    salt
  • 2 c
    frozen vegetables
  • 1
    homemade pie crust or double pie crust
  • 1
    egg to glaze over the top of pie (optional)

How To Make homemade chicken pot pie

  • Slice the chicken breast to desired size.

    Preheat oven to 350 degrees F. Cut the chicken into the desired size.

    Cook on the stovetop on medium heat. Once hot, add oil and chicken. Cook until the chicken is no longer pink in the middle. Once done, remove from the pan and set aside.

    Dice the onion. Place onions and butter in the same pan you cooked your chicken in. Saute onions until softened.

    Lightly sprinkle flour over onions. Stir for a few minutes; don't let it burn.

    Once clumpy, add the chicken broth and milk. Stir to combine. Best to use a whisk to dissolve any flour. Simmer.

    Once it's thickened, add the cooked chicken along with the chives, parsley, Italian seasoning (optional), salt, and pepper. Stir.

    Add frozen veggies. Mix well. Stir occasionally.

    Remove the pan from the stove. Place the bottom crust in a pie pan, 9 inch. Poke the bottom of the crust with a fork several times.

    Add the mixture to the pie crust.

    Add top crust, crimp edges closed. Brush a layer of whisked egg over the surface of the pie (optional). Cut a vent with a knife in the top of the crust.

    Bake for 40 minutes or until golden brown and flaky. Time may vary depending on the kind of pan you use.

    Let cool for about 10 minutes before serving.
