I love to make sauces from scratch. They always taste better to me than canned. Same for spices. I like making my own spice mixes.

Ingredients

  • SPICE MIX
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 tablespoon hot paprika
  • 1 tablespoon Mexican oregano
  • 1 tablespoon cumin
  • 2 teaspoons salt
  • SAUCE
  • 2 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups chicken stock
  • 2 cups tomato sauce
  • salt and pepper
  • ENCHILADAS
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 medium red onion, chopped
  • 1 pound ground beef
  • 1 can black beans (15 oz)
  • 1 can refried beans (15 oz)
  • 3 cups shredded Monterey Jack cheese
  • 8 10-inch flour tortillas
  • 1 large jalapeno, seeded and chopped
  • salt and pepper

How To Make homemade beef enchiladas

  • Step 1
    Mix the ingredients for the spice mix together and set aside.
  • Step 2
    Make the sauce. Add the oil to a large saucepan and whisk in the flour. Add 2 Tbsp of the spice mix and pour in the chicken broth. Keep whisking and then pour in the tomato sauce. Whisk until thickened and warmed through; set aside and keep warm.
  • Step 3
    To make the filling, add the oil to a saucepan. Add the onion and garlic and cook until softened. Add the ground beef and cook until it's no longer pink. Add the remaining spice mix and stir in the strained black beans. Add about 2 Tbsp of the enchilada sauce.
  • Step 4
    To assemble: Lay the tortillas out on a counter. Preheat the oven to 350 degrees. Place a small amount of sauce in the bottom of the baking pan. A 9x15 pan should work.
  • Step 5
    Spread a little refried beans on half of each tortilla. Spread half of the cheese over the other half of the tortilla. Top with equal amounts of the beef filling on top of each tortilla. Roll up and place in the baking pan. Pour the remaining sauce over the tortillas. Cover with foil and place in the oven for 15 minutes. Remove from the oven and remove the foil. Sprinkle the jalapeno pepper over the top. Then top with the remaining cheese. Place back in the oven for 10 more minutes until cheese is melted. Serve immediately.
