Ingredients
- 5 tablespoons butter, unsalted
- 2 medium onions chopped
- 1/2 pound mushrooms sliced
- 2 cups diced leftover turkey
- 1/2 cup diced baked ham
- 1 cup crumbled leftover bread stuffing
- 2 tablespoons chopped parsley
- 1/4 teaspoon died thyme
- 1 tablespoon curry powder
- 1 cup uncooked rice
- 2 1/2 cups hot chicken or turkey stock
- - salt and pepper
How To Make holiday leftover casserole

Step 1In skillet melt 4 tablespoons of butter, add onions and saute until limp and golden. add the mushrooms and saute for 2-3 minutes

Step 2Combine the vegetables in a casserole with the turkey, ham,stuffing, parsley and thyme. Mix well, taste and add salt and pepper to taste.

Step 3Preheat oven to 375 Melt remaining butter in skillet, add the curry powder and rice, saute lightly until rice is translucent. add to the casserole. pour in the hot stock. Cover the casserole and bake until the rice is tender and liquid is absorbed, about 25-30 minutes

Step 4If the rice does not seem quite tender, add a little more heated stock and continue cooking
