hearty potato and sausage bake

Approached by one of the young'uns in my church for a fundraiser, I picked through the website (they do that now!), and found this cute little Dump 3 Books in 1 cookbook. Eager to try it out, this was the first recipe that we picked. Kind of. We felt the base was pretty good, but to be exceptional enough to make it onto JAP, it needed fixing. . . Increase the vegetables, throw in some more seasonings, change the chicken sausage (doesn't even sound right!) for a real pork product, and we ended up with something amazingly wonderful. And easy. And inexpensive. Yum!

Ingredients

  • 1-1/2 pound red potatoes, cut into bite-size chunks
  • 2 onions, sliced
  • 1 pound carrots, cut into 3" chunks, or large coins, as appropriate to being bite-sized
  • 2 tablespoons butter, melted
  • 2 teaspoons mama's meatball mix (or other favorite italian mix herbs)
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 pound favorite brats, polish sausage, or other favorite product
  • garlic mist nonstick cooking spray

How To Make hearty potato and sausage bake

  • Step 1
    Preheat oven to 400°F. Spray 9 x 13 baking dish with garlic mist nonstick cooking spray.
  • Step 2
    Combine potatoes, onion, carrots, butter, salt, Mama's Meatball seasoning, salt, garlic powder, thyme, and pepper in prepared baking dish; toss to coat. Bake 30 minutes.
  • Step 3
    While vegetables are baking, prepare the sausage in your preferred manner. Once cooked through, slice into 1/4: slices.
  • Step 4
    Add sausage to the vegetables; mix well. Bake 15 - 20 minutes, or until potatoes are tender and golden brown.
