When you have leftover ham you need a way to use that wonderful protein. Over the years I've made a lot of casseroles & some were good & some - well not so much ! This recipe is a mix & match of multiple casseroles that finally came together in one really delicious dish. We have been enjoying this recipe for close to 20 years now & have never seen any reason to change it. It's warm, it's comforting, it's easy to make, it uses some of that extra ham and you can actually provide 4 generous servings with this recipe ! No leftover ham - use a ham steak. Happy Dining !

Ingredients

  • 2 cups uncooked wide egg noodles
  • 1/4 cup butter
  • 3 tablespoons all purpose flour
  • 1 cup milk
  • 1 can condensed cream of celery soup
  • 1-1/2 cup cooked ham - cut into bite size pieces
  • 3 tablespoons chopped green bell pepper
  • 1/3 cup peas - frozen or fresh
  • 1/2 cup broccoli florets - steamed or boiled
  • 1/2 cup fresh green beans - steamed and cut into bite size pieces
  • 1/2 cup diced carrots - steamed or boiled
  • 1/4 cup chopped celery - steamed or boiled
  • 2 tablespoons grated parmesan cheese
  • 1/2 cup canned onion rings
  • 1/2 cup shredded cheddar cheese - sharp or medium

How To Make ham and pasta casserole

  • Step 1
    Preheat oven to 350. Spray a loaf pan then set aside.
  • Step 2
    Cook noodles according to package directions. Drain and keep warm - reserve the pasta water for later.
  • Step 3
    Meanwhile, in a large pot, melt butter over medium heat. Sprinkle flour over the melted butter and cook while stirring until light tan in color. Gradually whisk in milk and the can of soup. Bring to a boil and cook - stirring constantly - until thickened then remove from heat.
  • Step 4
    Add the ham and all of the vegetables to the sauce and stir to mix. Add the cooked egg noodles to the ham mixture and stir to combine. If mixture is too thick add small amounts of the pasta water to thin.
  • Step 5
    Pour mixture into prepared loaf pan. Combine the onion rings and the shredded cheese then sprinkle evenly over the top of the casserole.
  • Step 6
    Cover and bake for 20 minutes. After 20 minutes, remove cover and bake for an additional 15 - 20 minutes or until bubbly and the cheese has melted. Serve hot.
