I created a new macaroni and cheese recipe, based on Grill Mates' garden vegetable seasoning, filled with sauteed vegetables.

Ingredients

  • 2 medium carrots, sliced thick
  • 2 tablespoons grated Parmesan cheese
  • 8 tablespoons garden vegetable seasoning, divided
  • 16 ounces dry penne pasta
  • 1 tablespoon olive oil
  • 4 portebello mushrooms, sliced
  • 1 medium red bell pepper, chopped
  • 1 medium yellow onion, peeled and diced
  • 2 cloves garlic, minced
  • 1 tablespoon sweet and tangy seasoning
  • 2 teaspoons ground black pepper
  • 1 cup heavy whipping cream
  • 3/4 cup half and half
  • 8 ounces cream cheese, softened
  • 2 teaspoons crushed red pepper flakes
  • 8 ounces Gouda cheese, shredded
  • 8 ounces mild cheddar cheese, shredded

How To Make garden macaroni and cheese

  • Step 1
    Preheat oven to 350 degrees F.
  • Step 2
    Coat a 13x9-inch baking dish with cooking spray. Add sliced carrots, grated Parmesan cheese, and 2 tablespoons garden vegetable seasoning; mix well.
  • Step 3
    Cook penne pasta according to package directions; drain. Transfer to a large bowl. Season with 2 tablespoons garden vegetable seasoning; toss well.
  • Step 4
    Heat olive oil in a large, deep skillet over medium heat. Add sliced portobello mushrooms, chopped red bell peppers, diced yellow onion, and minced garlic.
  • Step 5
    Cook for 5 minutes or until tender. Season with sweet and tangy seasoning, black pepper, and 1 tablespoon garden vegetable seasoning. Remove from heat and set aside.
  • Step 6
    Melt margarine in a medium saucepan over medium heat.
  • Step 7
    Combine heavy whipping cream, half and half, crushed red pepper flakes, and 2 tablespoons garden vegetable seasoning, stirring often. Let simmer for 6 minutes or until thickened.
  • Step 8
    Add sauteed vegetable mixture, cooked penne pasta, and green peas. Stir well until combined. Remove from heat.
  • Step 9
    Spoon into the prepared baking dish evenly. Sprinkle with shredded Gouda and mild cheddar cheese. Season with the remaining garden vegetable seasoning.
  • Step 10
    Bake uncovered for 30 minutes or until golden brown.
