Ingredients
- 1 can (13 3/4 oz.) beef broth
- 1 can (6 oz.) tomato paste
- 1 can 4.5 oz. green chilis
- 1 package (1 1/4 oz.) taco seasoning
- 1 cup uncooked rice
- 1 pound ground beef
- 1 small onion, chopped
- 1 can (17 oz.) corn, drained
- 1 bag (8 oz.) shredded colby or cheddar cheese
- - fritos corn chips
How To Make frito casserole

Step 1In a small bowl, blend 1 cup beef broth, tomato paste, green chilis and taco seasoning mix; set aside.

Step 2In a small sauce pan, over high heat, combine leftover beef broth and enough water to equal 1 3/4 cup liquid; heat to a boil, add rice and cook according to package directions.

Step 3In a large skillet over medium high heat, brown beef and cook onion until tender. pour off fat.

Step 4In a 2 quart casserole, layer 1/2 each of the rice, corn, meat, sauce and cheese. Repeat layers. Cover with lightly crushed fritos and bake uncovered in a 350 degree oven for 40 minutes.
