Ingredients For florentine layers

1 lbitalian sausage

1 cchopped onion
-
1 clovegarlic minced

2 (15 oz) cantomato sauce

1 (4oz) cansliced mushrooms drained

1 tspseasoning salt divided
-
1/2 tspbasil
-
1/2 tsporegano
-
1 (10( pkgfrozen spinach thawed and very well drained

2 ccottage cheese
-
1egg, beaten
-
1/4 cparmesan cheese
-
1/4 tspblack pepper
-
6 ozmafalata pasta
-
2 cshredded monterey jack cheese
How To Make florentine layers

1Cook pasta in salted water one minute less than package directions. Drain and set aside.

2If sausage is in casings remove this. Cook sausage with onion and garlic until cooked through, drain. Add tomato sauce, mushrooms, 1/2 teaspoon seasoning salt, basil and oregano. Bring to a boil, reduce heat and allow to simmer for 15 minutes.

3In a medium bowl combine the spinach, cottage cheese, egg, parmesan cheese and 1/2 teaspoon seasoning salt.

4In a 9x13 casserole layer 1/2 each: pasta, meat sauce, spinach mixture and shredded cheese. Repeat the layers using up remaining ingredients. Cover with foil and bake at 375 degrees x40 minutes. Let stand for 5-10 minutes before serving.
