Ingredients
- 1 pound italian sausage
- 1 cup chopped onion
- 1 clove garlic minced
- 2 (15 oz) cans tomato sauce
- 1 (4oz) can sliced mushrooms drained
- 1 teaspoon seasoning salt divided
- 1/2 teaspoon basil
- 1/2 teaspoon oregano
- 1 (10( package frozen spinach thawed and very well drained
- 2 cups cottage cheese
- 1 - egg, beaten
- 1/4 cup parmesan cheese
- 1/4 teaspoon black pepper
- 6 ounces mafalata pasta
- 2 cups shredded monterey jack cheese
How To Make florentine layers

Step 1Cook pasta in salted water one minute less than package directions. Drain and set aside.

Step 2If sausage is in casings remove this. Cook sausage with onion and garlic until cooked through, drain. Add tomato sauce, mushrooms, 1/2 teaspoon seasoning salt, basil and oregano. Bring to a boil, reduce heat and allow to simmer for 15 minutes.

Step 3In a medium bowl combine the spinach, cottage cheese, egg, parmesan cheese and 1/2 teaspoon seasoning salt.

Step 4In a 9x13 casserole layer 1/2 each: pasta, meat sauce, spinach mixture and shredded cheese. Repeat the layers using up remaining ingredients. Cover with foil and bake at 375 degrees x40 minutes. Let stand for 5-10 minutes before serving.
