Ingredients For florentine layers

  • 1 lb
    italian sausage
  • 1 c
    chopped onion
  • 1 clove
    garlic minced
  • 2 (15 oz) can
    tomato sauce
  • 1 (4oz) can
    sliced mushrooms drained
  • 1 tsp
    seasoning salt divided
  • 1/2 tsp
    basil
  • 1/2 tsp
    oregano
  • 1 (10( pkg
    frozen spinach thawed and very well drained
  • 2 c
    cottage cheese
  • 1
    egg, beaten
  • 1/4 c
    parmesan cheese
  • 1/4 tsp
    black pepper
  • 6 oz
    mafalata pasta
  • 2 c
    shredded monterey jack cheese

How To Make florentine layers

    Cook pasta in salted water one minute less than package directions. Drain and set aside.

    If sausage is in casings remove this. Cook sausage with onion and garlic until cooked through, drain. Add tomato sauce, mushrooms, 1/2 teaspoon seasoning salt, basil and oregano. Bring to a boil, reduce heat and allow to simmer for 15 minutes.

    In a medium bowl combine the spinach, cottage cheese, egg, parmesan cheese and 1/2 teaspoon seasoning salt.

    In a 9x13 casserole layer 1/2 each: pasta, meat sauce, spinach mixture and shredded cheese. Repeat the layers using up remaining ingredients. Cover with foil and bake at 375 degrees x40 minutes. Let stand for 5-10 minutes before serving.
