You're gonna love this recipe! I created a new chicken casserole called firecracker. It combines penne pasta and queso with a pinch of lime. It's perfect for cinco de mayo.

Ingredients For firecracker chicken casserole with lime queso

  • CASSEROLE
  • 1 c
    sliced jalapenos
  • 1 c
    crushed nacho flavored tortilla chips
  • 8 oz
    uncooked penne pasta
  • 3 Tbsp
    olive oil
  • 6
    boneless skinless chicken breasts, cut into strips
  • 3/4 c
    dark brown sugar
  • 1 c
    creamy wing sauce
  • 3/4 c
    honey mustard
  • 3/4 c
    chili sauce
  • 3 Tbsp
    red pepper flakes
  • 1 c
    shredded Mexican cheese blend
  • LIME QUESO
  • 1 c
    heavy cream
  • 8 oz
    cream cheese, softened
  • 1 can
    diced tomatoes and green chiles
  • 3 tsp
    lime juice

How To Make firecracker chicken casserole with lime queso

    Lightly grease a 9x13-inch baking dish. Add sliced jalapenos and crushed tortilla chips; mix well.

    Bring a large pot of lightly salted water to a boil. Add pasta, cook for 8 to 10 minutes, and drain.

    Heat the olive oil in a large skillet over medium heat. Place chicken strips in the skillet and saute 5 minutes or until no longer pink.

    In a medium bowl, combine brown sugar, wing sauce, honey mustard, chili sauce and hot pepper flakes; whisk together. Pour into a large ziplock bag.

    Add chicken strips into the bag, mix well and refrigerate for 20 minutes.

    To make the lime queso, combine heavy cream, cream cheese, and diced tomatoes and green chiles in a small saucepan over medium heat. Cook for 5 minutes. Stir in lime juice. Remove from heat.

    Preheat oven to 375 degrees F.

    Transfer chicken strips to a large bowl. Mix in with cooked penne pasta. Pour into a prepared baking dish.

    Spread lime queso over chicken-pasta mixture. Sprinkle with shredded Mexican cheese blend.

    Bake for 30 minutes until bubbly and lightly browned.
