This recipe is really good. It can be made into 2 smaller casseroles bake 1 and freeze 1 for later. To bake a frozen casserole, thaw first. Other meats can be substituted for the ground beef. Try shredded chicken. Yum!

Ingredients

  • 1 pound lean ground beef
  • 1 medium sweet onion , chopped
  • 1 1/2 teaspoons chopped garlic
  • 1/2 teaspoon salt
  • - italian seasoning, to taste
  • - taco seasoning, to taste
  • 1 can enchilada sauce
  • 1 cup salsa
  • 6-8 ounces fresh baby spinach
  • 1 can black beans, rinsed and drained
  • 1 - small can niblets corn, drained
  • 8 ounces cream cheese
  • 1 cup sour cream
  • 1 cup chopped olives (whatever kind you like)
  • 2 cups crushed frito corn chips
  • 2 cups shredded mexican cheese

How To Make fiesta casserole

  • Step 1
    In a skillet, over medium heat, brown the first 6 ingredients.
  • Step 2
    Drain off the fat if necessary. Add salsa, black beans, enchilada sauce, corn, & spinach.
  • Step 3
    Add cream cheese, sour cream, & olives. Cook for 5 minutes.
  • Step 4
    Layer 1 cup of crushed fritos, 1/2 of the meat mixture, 3/4 cup cheese, 1 cup crushed fritos, the rest of the meat mixture, & the remainder of the cheese into a 9 x 13 casserole dish.
  • Step 5
    Bake at 350 degrees for 30 minutes.
