fiesta casserole
This recipe is really good. It can be made into 2 smaller casseroles bake 1 and freeze 1 for later. To bake a frozen casserole, thaw first. Other meats can be substituted for the ground beef. Try shredded chicken. Yum!

Ingredients
- 1 pound lean ground beef
- 1 medium sweet onion , chopped
- 1 1/2 teaspoons chopped garlic
- 1/2 teaspoon salt
- - italian seasoning, to taste
- - taco seasoning, to taste
- 1 can enchilada sauce
- 1 cup salsa
- 6-8 ounces fresh baby spinach
- 1 can black beans, rinsed and drained
- 1 - small can niblets corn, drained
- 8 ounces cream cheese
- 1 cup sour cream
- 1 cup chopped olives (whatever kind you like)
- 2 cups crushed frito corn chips
- 2 cups shredded mexican cheese
How To Make fiesta casserole

Step 1In a skillet, over medium heat, brown the first 6 ingredients.

Step 2Drain off the fat if necessary. Add salsa, black beans, enchilada sauce, corn, & spinach.

Step 3Add cream cheese, sour cream, & olives. Cook for 5 minutes.

Step 4Layer 1 cup of crushed fritos, 1/2 of the meat mixture, 3/4 cup cheese, 1 cup crushed fritos, the rest of the meat mixture, & the remainder of the cheese into a 9 x 13 casserole dish.

Step 5Bake at 350 degrees for 30 minutes.
