This is a family favorite reaching back to my family's southwestern heritage. The recipe comes from my mother's family's cookbook.

Ingredients

1 pound ground beef
1 small onion, chopped
3/4 cup salsa
1 package taco seasoning mix
1/4 cup water
1 can sliced olives
1 package corn muffin mix
1 cup shredded cheese
1 cup corn
1 can diced green chilies

How To Make fiesta bake

Step 1

Preheat oven to 350 degrees

Step 2

Grease 8-inch square baking dish
Step 3

Cook beef and onion until beef is browned; drain
Step 4

Stir in salsa, seasoning mix and water
Step 5

Cook over low heat for 5-6 minutes or until mixture thickens
Step 6

Stir in corn and olives
Step 7

Spoon into prepared baking dish
Step 8

Prepare batter for corn muffin mix according to package directions
Step 9

Stir in cheese and chilies
Step 10

Spread over meat mixture
Step 11

Bake for 30-35 minutes or until crust is golden brown
