This is a simple and quick to prepare recipe. The recipe also has an exceptionally good taste. The meal is very satisfying and best of all there is very little clean up.

- 3 cups shredded potatoes
- 3/4 cup shredded cheese
- 4 - eggs, beaten
- 1/2 cup milk
- 1 cup ham, or cooked breakfast sausage, diced
- 1/4 cup diced green onion or regular onions
- - salt and pepper to taste
How To Make farmer's casserole

Step 1Preheat oven to 350 F Grease an 8 x 13 inch baking dish and arrange potatoes evenly on the bottom. Sprinkle with cheese, ham or sausage, and onions.

Step 2In a mixing bowl combine eggs, milk and seasonings. Pour egg mixture over layers in casserole dish.

Step 3Bake uncovered for 40 to 45 minutes or until knife inserted near the center comes out clean. Let stand for 5 minutes before serving
