The meal is very satisfying and best of all there is very little clean up.
- 3 c
- shredded potatoes
- 3/4 c
- shredded cheese
- eggs, beaten
- 1/2 c
- 1 c
- ham, or cooked breakfast sausage, diced
- 1/4 c
- diced green onion or regular onions
- salt and pepper to taste
How to Make Farmer's Casserole
- 1Preheat oven to 350 F
Grease an 8 x 13 inch baking dish and arrange potatoes evenly on the bottom. Sprinkle with cheese, ham or sausage, and onions.
- 2In a mixing bowl combine eggs, milk and seasonings.
Pour egg mixture over layers in casserole dish.
- 3Bake uncovered for 40 to 45 minutes or until knife inserted near the center comes out clean.
Let stand for 5 minutes before serving
