enchilada casserole
This is my Mother In Laws recipe! It’s one of my favorites! I used to just make Enchiladas until I had this!! So easy to make & so delicious!!

Ingredients
- 1 1/2 pounds ground beef
- 2 cans refried beans
- 1 can green chiles
- 1 Large can tomato sauce
- 16 small corn tortillas
- 1-2 bag shredded cheddar cheese
- 1/2 onion
- 1-2 can enchilada sauce
How To Make enchilada casserole

Step 1Brown ground beef, add salt & pepper & Onion. Then drain ground beef when it’s done.

Step 2Add Refried Beans & Green Chiles. Mix together. Pour a thin layer of tomato sauce on bottom of 13 X 9 Casserole Pan.

Step 3Lay 8-10 Corn Shells on bottom of Pan. Spread ground beef & refried mixture on top of shells.

Step 4Sprinkle some of the Cheese on top of that.(Save some to put on top of casserole). Layer 8-10 Shells on top of shells. Pour the rest of Tomato Sauce over Shells.

Step 5Bake 45 minutes at 350 Degrees. Sprinkle with the remaining Cheese the last 10 Minutes.
