Ingredients
- 1 bag cole slaw mix (14 oz or 397 gms) or equivalent sliced cabbage
- 1 pound lean ground beef
- 1 cup onion. chopped
- 1 cup cooked rice
- 1 clove garlic, minced or 1/2 tsp garlic powder
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 can tomato sauce (14 oz)
- 1/3 cup brown sugar
- 1/4 cup lemon juice

Step 1Set oven to 325 degrees F. to preheat.

Step 2Soften cole slaw mix (cabbage) in microwave for four minutes.

Step 3In a large bowl mix the ground beef, rice, chopped onion, garlic, salt, and pepper.

Step 4Spray a casserole with non-stick spray.

Step 5Layers: Put half the coleslaw/cabbage in the bottom of the casserole. Next make a loose layer of half the meat mixture. Next layer on the rest of the coleslaw/cabbage. Lastly, add the rest of the meat mixture and lightly press to even it out.

Step 6In a smaller bowl mix the tomato sauce, brown sugar and lemon juice. Pour this mixture on the top of the meat mixture. Do not mix it in. Cover casserole with foil. Bake at 350 degrees F for about 40 minutes to an hour until vegetables are tender and meat is cooked (165 degrees Farenheit or 70 degrees Celsius).
