easy cod, broccoli, and rice casserole
This cod casserole is simple, easy, and delicious. You can substitute fish with another meat, like pork chops or chicken breasts, if you aren't a fish fan. You can also use a different seasoning blend. This is a very adjustable recipe.

1/2 cwhite rice, uncooked

1/4 tspgarlic powder

10 ozbroccoli florets

1/4 cgreen onion, chopped

1 to 1 1/2 lbcod filets (or meat of your choice)

1 TbspFrench fried onions

2 TbspPanko bread crumbs

1/8 tspsmoked paprika

1/8 tspgarlic powder

1/8 tsponion powder

1/8 tspItalian seasoning (or seasoning blend of your choice)

salt and pepper to taste
How To Make easy cod, broccoli, and rice casserole

1Preheat oven to 375 degrees F.

2Heat up broth.

3In a 2-quart baking dish, mix hot broth, rice, broccoli, 1/4 teaspoon of Italian seasoning, 1/4 teaspoon of garlic powder, and about 3 tablespoons of the green onion.

4Cover, then put into the oven and bake for 10 minutes.

5Remove from the oven and place the fish on top of the rice mixture.

6On top of the fish, sprinkle the French fried onions, Panko bread crumbs, quarter teaspoons of garlic powder, smoked paprika and onion powder, green onions, salt, and pepper.

7Put cover on and bake for 20 minutes.

8Remove the lid and bake for 5 more minutes or until the meat and rice are done. I serve it with garlic bread.
