easy cod, broccoli, and rice casserole
This cod casserole is simple, easy, and delicious. You can substitute fish with another meat, like pork chops or chicken breasts, if you aren't a fish fan. You can also use a different seasoning blend. This is a very adjustable recipe.

Ingredients
- 1 1/2 cups chicken broth or vegetable broth, hot
- 1/2 cup white rice, uncooked
- 1/4 teaspoon garlic powder
- 1/4 teaspoon Italian seasoning (or seasoning blend of your choice)
- 10 ounces broccoli florets
- 1/4 cup green onion, chopped
- 1 to 1 1/2 pounds cod filets (or meat of your choice)
- 1 tablespoon French fried onions
- 2 tablespoons Panko bread crumbs
- 1/8 teaspoon smoked paprika
- 1/8 teaspoon garlic powder
- 1/8 teaspoon onion powder
- 1/8 teaspoon Italian seasoning (or seasoning blend of your choice)
- salt and pepper to taste
How To Make easy cod, broccoli, and rice casserole

Step 1Preheat oven to 375 degrees F.

Step 2Heat up broth.

Step 3In a 2-quart baking dish, mix hot broth, rice, broccoli, 1/4 teaspoon of Italian seasoning, 1/4 teaspoon of garlic powder, and about 3 tablespoons of the green onion.

Step 4Cover, then put into the oven and bake for 10 minutes.

Step 5Remove from the oven and place the fish on top of the rice mixture.

Step 6On top of the fish, sprinkle the French fried onions, Panko bread crumbs, quarter teaspoons of garlic powder, smoked paprika and onion powder, green onions, salt, and pepper.

Step 7Put cover on and bake for 20 minutes.

Step 8Remove the lid and bake for 5 more minutes or until the meat and rice are done. I serve it with garlic bread.
