easy cod, broccoli, and rice casserole

This cod casserole is simple, easy, and delicious. You can substitute fish with another meat, like pork chops or chicken breasts, if you aren't a fish fan. You can also use a different seasoning blend. This is a very adjustable recipe.

Ingredients For easy cod, broccoli, and rice casserole

  • 1 1/2 c
    chicken broth or vegetable broth, hot
  • 1/2 c
    white rice, uncooked
  • 1/4 tsp
    garlic powder
  • 1/4 tsp
    Italian seasoning (or seasoning blend of your choice)
  • 10 oz
    broccoli florets
  • 1/4 c
    green onion, chopped
  • 1 to 1 1/2 lb
    cod filets (or meat of your choice)
  • 1 Tbsp
    French fried onions
  • 2 Tbsp
    Panko bread crumbs
  • 1/8 tsp
    smoked paprika
  • 1/8 tsp
    garlic powder
  • 1/8 tsp
    onion powder
  • 1/8 tsp
    Italian seasoning (or seasoning blend of your choice)
  • salt and pepper to taste

How To Make easy cod, broccoli, and rice casserole

    Preheat oven to 375 degrees F.

    Heat up broth.

    In a 2-quart baking dish, mix hot broth, rice, broccoli, 1/4 teaspoon of Italian seasoning, 1/4 teaspoon of garlic powder, and about 3 tablespoons of the green onion.

    Cover, then put into the oven and bake for 10 minutes.

    Remove from the oven and place the fish on top of the rice mixture.
  • This is the fish after I added the toppings.

    On top of the fish, sprinkle the French fried onions, Panko bread crumbs, quarter teaspoons of garlic powder, smoked paprika and onion powder, green onions, salt, and pepper.
  • Ready to go back in the oven.

    Put cover on and bake for 20 minutes.
  • Ready to eat!

    Remove the lid and bake for 5 more minutes or until the meat and rice are done. I serve it with garlic bread.
