dorito casserole, my way
Found this recipe, but since I altered it I am writing my alterations. Making it for the 1st time 4-15-21. Smells really good! Although hubby says I am a wimp because I don't like pepper jack cheese...so that was one of the alterations! LOL

Ingredients
- 1 pound chopped rotisserie chicken (chopped more), walmart
- 8 ounces sour cream
- 1 can cream of chicken soup
- 2 slices yellow onion, diced
- 11 ounces can corn, drained well
- 1 cup shredded pepper jack cheese
- 2 cups shredded cheddar cheese
- 1 - spoon of minced refrigerated garlic (used spoon from my silverware drawer)
- fresh ground black pepper to taste, i used about 4 grinds
- 1/2 teaspoon grill mates roasted garlic and herb (cause hubby seems to not know what poultry seasoning it...lol)
- 9 1/4 ounces bag doritos, crushed to make 3 cups (eat the leftovers)
- sour cream, optional
- shredded lettuce, optional
- guacamole, optional
- chopped tomato, optional

Step 1Combine chicken, sour cream, soup, onion, corn, 1 c each cheese, garlic, pepper, poultry seasoning, mix well. Spray 9x13 with PAM. Put evenly into bottom, top with remaining 1 c cheddar, and crushed doritos. Bake at 350 degrees, 25 min, or until bubbly, then let rest 5-10 min and serve. I like my mexican style things to have additional sour cream, guacamole, and shredded lettuce. Hubby likes chopped up tomatoes.
